Nico Moretti grew up in London, Canada where his father, Vito Moretti, started the city's first Italian restaurant in the 1950's. With a degree in Chemical Engineering, Nico worked within the oil industry in Australia for 10 years, before leaving it all behind, to pursue his passion for food & entertaining by establishing his own cooking school - Cooking Passions - in 2002.

We Canadians love our ribs. Where I'm from - in London, Ontario - there's a rib festival every summer where people compete with different recipes. At Dad's restaurant they would BBQ individually cut pork ribs with just some oil, salt & pepper then a squeeze of lemon after being grilled. They were delicious in their Italian simplicity.
I remember travelling through Italy during winter when our girls were about 11 and 9 years old! My Zio Vincenzo and Zio Peppino took us all to the local bar/caf in their village of Modugno in Puglia and there was this thick hot chocolate dispenser swirling around on the counter ready to pour out the thickest hot chocolate I had ever seen!
With winter now upon us and as we prepare to head down to Manjimup, the southern hemisphere's Black Truffle Capital, for the first of our "Discover Southern Forests Black Truffle Hunt, Food & Wine Producers Experience", I wanted to share with you this extremely easy recipe for this incredibly sought-after subterranean fungus!.

I was lucky enough to do the Arabic Meze class last night with Urban Provider. Nico is the consummate host - knowledgeable, relaxed and charming. It was a whole foodie experience - lesson, recipes, photos and stories. I'm not a cook but I love to eat and learn about food so a class with Nico is the perfect evening's entertainment. And you come away happily full!

Nico hosted us for our pre-retreat Italian Passion dinner and what a wonderful night it was for our retreat guests. So relaxed, smooth sailing through a delicious meal and wine tasting, navigated so expertly by Nico! I can’t rave enough about our experience and we will be sure to host another Myall members event at Nico's again soon.

I was really interested in booking a cooking class with Urban Provider, but when I called to find out more Belinda was impatient and not able to answer my questions in a professional and polite manner. She went as far as calling my questions ´stupid´ - definitely a lot to learn when it comes to customer service! As a result of this disappointing experience, I would definitely not book anything with this provider and hopefully I am saving some people from having to go through a similarly horrendous phone call.

Great hosts and amazing food. I received the cooking class as a surprise present. It was a fantastic gift, great way to spend an evening and I learned some really useful tricks about cooking Indian cuisine.
