We take bookings for lunch or dinner in Republic Dining from Monday - Friday. Looking for something more casual? Join for drinks and bar food at Taylor's Rooftop or Republic Bar. We take online bookings on Taylor's Rooftop for groups of up to 20 Monday - Saturday & Republic Bar is walk ins only. For larger groups, please get in touch with our reservations team here.
Spread across three floors The Republic Hotel has three distinct offerings. Grab a quick bite over beers and live sport at the Republic Bar on ground level, head up to level 1 to Republic Dining for a unique fine dining experience or climb up to Taylor's rooftop, serving bar food, cocktails and good times.
Come upstairs to Republic Dining, a haven hidden in plain sight above the heart of the city, where lunch is never out of fashion. In an airy, high-ceilinged dining room secluded from the bustle below, stately old windows bathe diners in soft sunlight filtered through the Pitt Street treetops. White tablecloths and our renowned discreet, attentive service embrace the traditions of fine dining.
Up on the fourth floor you'll find Taylor's Rooftop Bar, lifting the lid on the Republic Hotel. A vertical garden and the city skyline frame a lush party oasis where open-air good times can be conveniently sheltered by a retractable roof. But mostly, Taylor's goes topless. On the roof it's all about light, bright bar food and refreshing cocktails.

Disappointing.
Booked for my birthday. Confirmed the night before via email. We travelled almost an hour only to have the place shut. No signage, no communication and we were left to call to get a through to them which took multiple attempts. It was embarrassing for me as we had to find other place for a large group to have my birthday celebration but due to it being a Saturday everywhere was busy. They also took my full amount as well which I could have spent somewhere else.
Completely understandable due to the pandemic however there were no communication on this. I’m so upset and embarrassed

Giving 1 star for the service and environment, the rooftop arrangement was nice but the food was soo bad. I ordered chicken parmigiana and it was so dry and weird. The chicken was double fried and had dark burnt edges. The coleslaw was smelly and only the chips were kinda okay to eat. I could not even eat half from my plate. Do not recommend going there at all for food. Just wasted $24, even frozen parmigiana from woolies tastes better.

The place is nice. Open rooftop sets the mood. But there were missing tiles on the floor, which was pretty dangerous. And the ones that were not missing were loose. Most importantly, for a bar that advertises its cocktails, the staff incorrectly made 100% of the cocktails order :(

Very modern dining room with warm and attentive service. Starting with the bread, everything was well above expectations,the oysters were very fresh and the crumbed prawns were cooked perfectly (the pictures don't do it justice). We each had steak with truffle sauce and the steaks were cooked perfectly but the truffle lacked smell. Loved the mushy peas and chips. Wines were fairly priced and we were too full for dessert...

Fun rooftop pub that’s lively and quaint. Located on Pitt and bridge streets close to the quay. Excellent salads and bowls. The salmon poke is incredible. Happy hour fridays and Saturday’s 5-7pm. House spirits beer and wines $6 bucks. Table reservations available but not necessary. Especially enjoyed Neal. Great host. Made our stay enjoyable.
